The vineyard is located at Orange in the central ranges of N.S.W. At 860 metres the cool climate provides conditions that allow for slow ripening which results in maximum flavour while maintaining acidity. The vines are 31 years old and planted in deep red basaltic soils on sheltered north facing slopes of Mt Canobolas. Yields are low at less than 5 tonnes per hectare.
The grapes were harvested in sound ripe condition and excellent flavour.
Harvest date: 11th March 2016.
The wine is bright green in colour. This wine has fresh fruity aromas of pear lime and blossom. A gentle fruit sweetness mid palate, pink lady apple & nashi pear keeping it fresh, leads to a clean fresh acidity with a finish that is long and soft.
A great fish wine, try it with a mild fish curry, chilli prawn linguine or a blue cheese & fig salad.
The grapes were harvested at night and the grapes transported directly to the winery. The grapes were lightly pressed and the juice cold settled for 48 hours. The clear juice was fermented at 12 degrees Celsius for 3 weeks. The wine was stored briefly on lees before bottling.
